• Chicken meat protein hydrolysate (CMPH) exhibited strong antioxidants. • CMPH contained 85.51% of short peptides (≤ 1 kDa) with carnosine and anserine. • CMPH at 0.21–1.71 mg/mL protected SH-SY5Y cells against H₂O₂-induced oxidative stress. • CMPH treatment (1.10–2.20 g/kg) improved spatial memory in Alzheimer's disease model. • Dual-targeting: modulated APP/BACE1/PS1 and reduced TNF-α/NF-κB expression.
