• A bimodal interfacial switch governs Cu²⁺-induced lipid phase separation. • Cu-Cu bridges form at high concentrations, driving rigid domain separation. • Cu²⁺ greatly increases DMPG Tm and induces highly ordered multilamellar stacks. • ESR signal loss directly evidences Cu-Cu pair formation in membranes.
