Eggshell membrane: Structure, purification, properties and multifunctional applications

The recycling of biological wastes is of great significance for the sustainable development and management of the environment. Eggshells, one of the widely discarded kitchen wastes, contain high potential values, such as the potential as a good adsorption material, wound dressing, and multi-functional electronics, which are often overlooked. The last 10 years have witnessed a surge of interest and rapid development in understanding eggshell membrane (ESM) structure and trying to repurpose ESM into high-value-added products. Herein, the recent development of such newly developed and potentially competitive biomaterials is summarized. This review first introduces the key morphology of the ESM, including entangled fibrous network structure, high surface area, high thermal stability, and orientated crystallization direction along intra-polypeptide chains due to the presence of numerous proteins. Then, the separation and preparation methods of ESM from eggshells are highlighted. Owing to the interwoven fibrous and porous structures, the unique biological, adsorptive, and piezoelectric properties are illustrated, which is highly beneficial in biosensing, biomedical and environmental engineering, and energy harvesting. Finally, we propose new perspectives regarding the high potential value of ESM as a next-generation bioresource in versatile applications.
