• Formulated Nutrisure, a roasted chickpea-based nutritional supplement fortified with nuts, seeds, psyllium husk, beetroot, and turmeric powders to enhance its compositional and functional attributes. • Exhibited significantly higher protein, fiber, and fat contents than the control formula, alongside elevated antioxidant activity as indicated by TPC, TFC, DPPH, and FRAP assays. • Demonstrated good storage stability over 60 days, with minimal reductions in nutritional and functional quality parameters. • FTIR results showed the presence of functional groups associated with proteins, lipids, and phenolic compounds. • Sensory assessment showed that the chickpea-based formulation (NCH) achieved the highest overall acceptability, maintaining desirable texture and flavor throughout the storage period.
