Functional properties of starch/chitosan nanoparticle films incorporated with varying anthocyanin concentrations for potential smart food packaging application

Environmentally friendly smart packaging films with pH-sensing capability and antibacterial potential were developed via a solvent casting approach, consisting of starch/chitosan nanoparticles (CNP) combined with varying anthocyanin concentrations, including 0, 5, 10, 15, and 20% w/w. The films were investigated in relation to physical, mechanical, thermal, water vapor permeability (WVP), antibacterial, and pH response properties. It was found that a rise in concentration of anthocyanin to 20% w/w in the films improved the tensile strength by 49.2% and Young’s Modulus by 67.3%. The onset temperature and maximum thermal degradation temperature increased to 248.21 °C and 288.39 °C, respectively. In contrast, elongation at break and WVP decreased by 54.9% and 42.4%, respectively. These findings were attributable to the synergistic interaction among starch, CNP, and anthocyanin within the film matrix. The films incorporated with anthocyanin did not exhibit inhibition zones against Staphylococcus aureus and Escherichia coli; however, clear areas were observed directly beneath the films, indicating potential contact-dependent antibacterial activity associated with the immobilization and limited diffusibility of active compounds within the matrix. The films displayed different changes in color, turned red at a pH of 1–6, purple at a pH of 7, blue at a pH of 8–9, and green at a pH of 10–12, demonstrating their potential as intelligent indicators. Furthermore, the practical application of the films was evaluated during chilled shrimp storage for 6 days, where the purple color gradually faded, corresponding with spoilage progression and the accumulation of volatile basic nitrogen. Overall, the developed starch/CNP/anthocyanin films demonstrated enhanced structural and functional properties, and are thus promising for use as environmentally friendly smart packaging for real-time food quality monitoring.
