• Beef muscle of pre-rigor was innovatively subjected to power ultrasonication (US). • Pre-rigor US, particularly US600, accelerated early postmortem pH decline. • Both pre-rigor US improved beef quality during postmortem aging. • Both pre-rigor US induced mitochondrial dysfunction at the early postmortem. • Increased glycolytic enzymes activities and sarcoplasmic calcium levels were mainly observed in pre-rigor US600.
