This review provides a comprehensive overview of the role of functional fillers, including nanostructured, inorganic, and bio-based materials, in enhancing coating performance through physicochemical and interfacial interactions. Emphasis is placed on how these fillers interact at coating–substrate and filler–matrix interfaces to improve barrier properties, reduce ionic transport, and strengthen mechanical integrity. Interfacial engineering strategies such as surface functionalization and dispersion optimization are discussed in the context of filler performance. Techniques such as electrochemical impedance spectroscopy (EIS), Fourier-transform infrared spectroscopy (FTIR), and atomic force microscopy (AFM) are highlighted for their effectiveness in characterizing surface morphology, interfacial adhesion, and the nanoscale distribution of fillers. The review explores recent advances in self-healing, sustainable, and multifunctional coatings driven by filler–interface synergy for long-term corrosion protection, offering a physicochemical perspective beyond conventional coating-based descriptions. This highlights the critical role of coatings not only as passive barriers but as dynamic systems governed by interfacial and physicochemical interactions.
