• PAA exhibits a non-linear globule-to-coil transition driven by ionization degree. • Surface potential shifts from dipole to charge dominance during deprotonation. • Mg2+ ions stabilize coiled states via salt-bridges in secondary hydration layers. • Hierarchical double-layer hydration shells are formed around carboxylate groups. • Bound water shows prolonged residence times and a spatial gradient of diffusion.
