• 3D flexible CTS-Ag@NCHG SERS substrates is developed by a feasible in-situ growth strategy. • Due to the high density of 3D hotspots, CTS-Ag@NC-HG SERS substrates exhibit prominent detection sensitivity and signal homogeneity. • The flexible CTS-Ag@NCHG SERS substrates successfully detect the food preservative residues on irregular food surfaces.
