Abstract

• Ultrasound-assisted deep eutectic solvent extraction (UDE) achieved a maximum polysaccharide yield of 18.56% with a 1.71-fold increase over hot water extraction. • UDE-extracted G. uralensis polysaccharides exhibited superior physicochemical properties of lower molecular weight, enhanced thermal stability, reduced particle size, and increased galacturonic acid content. • The DES system maintained high extraction efficiency over three consecutive recycling cycles, indicating good operational robustness and environmental sustainability. • The UDE-extracted polysaccharides showed potent antioxidant activity and suppressed IL-13-induced inflammation through the STAT6/MYD88 axis.
