• Internal airflow redistribution reduced drying time by up to 50%. • Internal airflow redistribution improved drying uniformity in thick and sticky BSG beds. • Drying temperature governed moisture removal, while bed thickness increased diffusion resistance. • Higher drying temperatures enhanced phenolic release and antioxidant activity. • HMF formation and color changes reflected drying intensity.
