• Electric field responsive switchable wettability 3D nickel foam was built. • On demand separation of O/W and W/O emulsions was achieved. • Stepwise separation of W/O/W and O/W/O emulsions was realized. • Electrochemical switching released retained phases and restored flux. • Stable separation was maintained in complex industrial oil water systems.
