• Leaf sheaths of red sorghum (Sorghum bicolor) are a plant waste rich in 3 deoxyanthocyanidins. • UAE and NADES facilitated the extraction of 3-deoxyanthocyanidins • NADES gave higher antioxidant, antimicrobial and antidiabetic activities. • NADES extract gave higher bioaccessibility of 3-deoxyanthocyanidins. • NADES extract of 3-deoxyanthocyanidins displayed good thermal stability.
