• C-terminal truncation of dextran dextrinase alters product size distribution. • Isomaltomegalosaccharide yield increases by 39% as dextran formation decreases. • Truncation creates a kinetic bottleneck favoring intermediate chain elongation. • Mutant enzyme retains high α-(1→6) regiospecificity and catalytic efficiency.
