• SPC was facilely synthesized from fructose-derived porous carbon nanosheets. • SPC achieved 70.1% HMF yield from fructose in 1,4-dioxane/H2O at 140 ℃. • SPC efficiently converted concentrated fructose to HMF. • SPC showed moderate recyclability in fructose dehydration reactions.
