• M-gallate (M = Mg, Ni, Co) MOFs were synthesized at the gram scale (6.5g) under mild conditions using low-cost raw materials. • Mg-gallate showed a water capture capacity of 170.0 and 178.6 mg/g under 0.2% RH and 2.6 % RH, respectively, which far exceeds the current record of the reported porous materials. • The excellent performance is attributed to the synergy of hydrogen bonding between water molecules and oxygen-containing groups on the framework, hydrogen bonding among water molecules, and the pore-filling effect.
