• The spatial fractional GS model and FHN model with spatiotemporal variable coefficients are proposed. • Fourier spectral method is developed for 3D variable-coefficient spatial fractional reaction–diffusion models governed by Riesz fractional derivative. • The effects of different forms of diffusion coefficients (including trigonometric, polynomial and combined functions) on pattern formation are investigated. Additionally, the temporal evolution of patterns in the 3D variable-coefficient spatial fractional reaction–diffusion models is discussed.
