• Low-level melanoidins (5–20 mg/kg TS) disintegrated the extracellular structure. • Melanoidins altered the non-covalent forces between extracellular components. • Melanoidins mediated ROS generation, cell inactivation, and electron transfer. • Melanoidins facilitated water-soluble molecules evolution of solid-aqueous phase. • Melanoidins promoted the formation of active molecules by 22.51–28.72%.
