In soft soil areas, the stability of soft soil slopes is crucial to engineering safety during underground space development. To investigate the deformation and failure behaviors of soft soil slopes, a model test was conducted using large-scale undisturbed structured sample. The deformation process of the soft soil slope was analyzed under different overloads on slope top, and changes in pore water pressure, soil pressure, and resistivity were recorded. The results show that undisturbed soft soil slopes have significant structure. When the load exceeds 30 kPa, the structure of the soft soil slope is damaged, the deformation rate increases and cracks appear. The structured damage of the slope can be reflect by the change in resistivity, including the rearrangement of particles and pores as well as the seepage of pore water. The ratio of the increase in resistivity to the total change in resistivity is proposed to be the slope damage factor D. At a load of 45 kPa, the damage factor D increased by 78%. The deformation of structural soft soil slopes is divided into three stages: compression deformation, damage deformation, and bulging failure. At the damage deformation stage, the rate of slope settlement increases and cracks appear. The horizontal bulge of the slope surface is up to 12.1 mm, the pore water pressure dissipates rapidly, and differential changes in soil pressure occur.
