Modeling moisture release in mango purée's foam-mat drying process using heat pump technology

Abstract

This study applied heat pump technology combined with foam-mat drying (FMD) to improve the drying process of mango purée. The use of FMD increased the surface area available for moisture removal, resulting in reduced drying time and improved moisture diffusion. Drying behavior was described using six mathematical models, with the Page model providing the best fit through AIC and BIC value. Effective moisture diffusivity, calculated from Fick's second law, ranged from 2.67 × 10−9 m2/s to 3.29 × 10−9 m2/s, while the activation energy was 11.74 kJ/mol. Residual plots confirmed the accuracy of model predictions. Higher drying temperatures led to shorter drying durations while preserving product structure. However, no direct experimental comparison with other drying techniques was conducted, which should be considered a limitation of this study.
