• Oil concentrations remained remarkably stable under stress. • Oil fatty acid profile was highly responsive to stress imposition. • The fatty acid response depended nonlinearly on stress timing, peaking at R3–R5.5. • Oil quality was associated with source–sink ratio during grain filling period.
