• An amphiphilic random copolymer could self-assemble into aggregates under the induction of pH. • The size of the self-assembly aggregates was changed by adjusting pH. • The aggregates, used as particulate emulsifier, emulsified various lipophilic oils. • The oil phase volume fraction emulsified by aggregates at a lower concentration reached up to 90%. • HIPPEs stabilized by aggregates exhibited the good stability.
