• Two exopolysaccharides (EPS) were extracted from polysaccharide-free medium. • Bifidobacterium bifidum 3469 harbored a compact eps cluster yielding EPS (BBF-EPS). • Bifidobacterium animalis subsp. lactis 9749 produced galactose-rich EPS (BAL-EPS). • BBF-EPS and BAL-EPS could be utilized as substrates for Lactobacillus growth. • BBF-EPS and BAL-EPS distinctly modulated short-chain fatty acid profiles.
