Removal of Harmful Substances from Food Products Using Covalent Organic Frameworks

Ensuring food safety is crucial for human health, as food can be exposed to harmful substances during production, processing, and transportation. Although several methods exist for removing harmful substances, all these methods have some limitations. Lately, covalent organic frameworks (COFs) have been employed in the extraction of harmful substances owing to their remarkable properties including high stability and tailorization of functions. This article reviews the current methods for removing hazardous substances from food and also reviews the literature on the use of COFs for this purpose from 2019 to 2025. COFs were classified according to the types of hazardous substances, and the synthesis methods of these COFs and their effectiveness and mechanisms in removing hazardous substances were summarized. Finally, the perspectives associated with using COFs for this purpose are discussed along with key perspectives.
