• MDCMs stability in aqueous organic-contaminant removal is reviewed from structural, chemical, and performance aspects. • Roles of coordination bonds, metal sites, defects, and dopants in stability and service life are clarified. • Effects of pH, coexisting ions, and humic acid on MDCMs behavior in complex waters are discussed. • Multimetal synergy, core–shell design, and defect engineering are outlined as routes to robust MDCMs. • Standardized testing, in-situ characterization, green scale-up, and data-driven design are discussed.
