Soybean seeds are a major protein source in broiler diets; however, the presence of anti-nutritional factors (ANFs) in raw soybeans limits nutrient utilisation. This study determined the factors influencing the nutritional value of extruded seeds of six European soybean cultivars in broiler chickens. Raw and extruded samples were analysed for composition and ANF indicators, including phytic phosphorus (P), trypsin inhibitor activity (TIA), urease activity (UA), NDF and ADF. A trial was conducted with 210 Ross 308 male broilers (days 17–21), using diets containing 50% extruded soybeans and titanium dioxide as an indigestible marker for AID determination via the difference method. Extrusion reduced phytic P by 24–40%, TIA by 73–83%, and UA by 63–78% across cultivars. Pearson’s correlation analysis revealed the strongest negative associations (r = −0.410 to −0.714) between residual phytic P and the AID of DM, CP, EE, and most amino acids. Slightly weaker values were confirmed for NDF and ADF (r = −0.274 to −0.482). Apparent ileal digestibility (AID) varied significantly (P < 0.05) among cultivars: dry matter (DM, 0.615–0.819), crude protein (CP, 0.815–0.919), and ether extract (EE, 0.924–0.977), with Merlin and Lissabon exhibiting the highest values. Indispensable amino acid AID ranged from 0.541 (cysteine, Lissabon) to 0.947 (lysine, Lissabon), and dispensable amino acid AID from 0.700 (proline, Mavka) to 0.946 (glutamic acid, Merlin). Linear and quadratic orthogonal contrasts were calculated to determine the relationship between phytate phosphorus concentration and nutrients AID. Quadratic contrasts were observed for most parameters, demonstrating a curvilinear dose-response relationship. Overall, extrusion effectively enhanced nutrient digestibility by reducing ANFs, with cultivar-specific responses, supporting the broader use of European-grown soybeans in sustainable broiler nutrition. However, to a greater extent phytic phosphorus P, and to a lesser extent NDF and ADF, determine the nutritional value of extruded soybean seeds in the broiler chicken nutrition.
