• A novel composite gel system composed of Tibetan sheepskin collagen and highland barley β-glucan was constructed. • Ca2+ exhibited a more pronounced regulatory effect on the gel network than Na+. • Ca2+ enhanced gel strength by promoting intermolecular cross-linking. • Hydrophobic interactions played a dominant role in stabilizing the gel network.
