• Cross incisions improved catalytic infrared peeling efficiency to 97.21±1.48% • Incision pretreatment reduced heating time by 16.65% compared to intact tomato • The dry-peeling characteristic of infrared radiation prevented nutrient loss • Incision pretreatment accelerated heat transfer and moisture evaporation in peel • The CIP with incision treatment reduced energy consumption by 13.03%.
