• Perforating carrot slices reduced drying time and lowered peak surface temperatures during drying. • Artificial perforations improve color and Vitamin-C retention without additional energy use. • Perforated biomass required 61% less energy to dry than controls. • Existing drying models accurately predict the drying of perforated biomass.
