• Pinot Noir and Chardonnay face a wide range of water deficits, including severe conditions driven by global warming. • Hundreds of mesocarp metabolites correlate with water deficit status, forming biochemical fingerprints of grape quality. • Both varieties can grow under severe water stress, but Chardonnay is expected to fare better. • Integrated metabolomics is able to capture relevant biochemical fingerprints from large sets of natural vineyard conditions.
