• Mesoscale whey protein aggregates (mWPA) showed improved heat stability. • mWPA and WPI showed comparable foam capacity. • mWPA improved foam stability than WPI. • The foam stabilization mechanism of mWPA is concentration-dependent. • mWPA exhibited extensive droplet flocculation in o/w model emulsions.
