Development and performance evaluation of tender jackfruit peeling machine

Peeling is the primary operation in processing tender jackfruit, and is performed manually with a sharp knife. Efforts have been made to develop jackfruit peeling machines; however, these machines are not commercially available due to low peeling efficiency and high peeling loss. The present investigation was carried out to develop a jackfruit peeling machine, with emphasis on the design of the peeling blade, holding assembly and a working platform for adjusting the peeling blade position. The machine was designed on the principle of scraping the peel from a vertically held jackfruit with a curved blade. The rotational speed of the jackfruit, linear speed of the peeling arm, and location of the peeling blade (LB) are the key operating parameters of the machine. A maximum peeling efficiency of 97.71% was achieved with a peeling loss of about 3.0% at a rotational speed of 80 rpm, a linear peeling speed of 4.5 m/s, and a blade location of 85 mm. The machine is operated by a 1.47 kW electric motor and has an input capacity of approximately 131.7 kg/h. The developed machine, with improved peeling efficiency, has strong potential for use in minimal processing and for producing tender jackfruit powder.
