Arabinoxylan is a non-starch polysaccharide found in sorghum with immense potential as a functional biopolymer. This study investigates the effect of cold plasma on the physiochemical, antioxidant, and structural properties of sorghum arabinoxylan. Although different voltages (10kV and 20kV) and exposure times (5 min and 10 min) of cold plasma were applied, the characteristics were enhanced, with increased water absorption capacity, swelling capacity, and solubility was achieved at 20 kV 5 Min. Higher voltage and longer time release higher phenolic compounds, leading to an increase in antioxidant activity, as assessed by DPPH, ABTS, TPC, and TFC, along with a significant increase in ferulic acid content. FTIR analysis revealed no new peak formation; minor shifts in peak area intensity were observed. Zeta potential analysis revealed that Ax acquired more negative charge with an increase in time and voltage (-9.02 to -18.7 mV). The particle size of arabinoxylan increased gradually, and no significant changes in the microstructure of arabinoxylan. Relative crystallinity increased (16.91% to 26.29%) without a significant shift in angle 2θ. These findings confirm that cold plasma is an effective and sustainable technique for enhancing functionality while maintaining its structural integrity for potential applications in food and biomedical systems.
