• The absence of phosphates leads to severe quality defects in Harbin red sausages. • Defatted flaxseed meal (DFM) could be used as phosphate replacer in red sausages. • Dietary fiber from seaweed (DFS) combined with DFM improved quality of sausages. • Adding 0.5% DFM and 0.8% DFS showed the best phosphate replacement effect. • The addition of DFM and DFS inhibited lipid oxidation in phosphate-free sausages.
