• Foliar-applied L-Glu markedly altered grain metabolism under drought stress. • L-Glu addition in vitro greatly enhanced starch digestibility. • In vitro addition of L-Glu significantly regulated starch retrogradation. • L-Glu forms 1–2 stable intermolecular hydrogen bonds with starch chains. • L-Glu can form extensive hydrogen bonds with water.
