• HVEF induced ROS/RNS generation, causing MPs oxidation and nitration. • Site-specific oxidative/nitrative modifications in MHC were identified via proteomics. • HVEF disrupted secondary structure, reduced hydrophobicity, and promoted crosslinking. • Protein modifications enhanced surface electronegativity, rheology, and gel strength. • Optimal functional properties were achieved after 20 min of HVEF treatment.
