• Employed enzymatic interesterification to synthesize structured lipid ALA-CSO from cottonseed oil and α-linolenic acid. • 11.16-fold increase in ALA (31.85%) and 11.18% at sn-2, as inferred via 13C-NMR and UPLC-MS/MS. • Achieved improved properties (lower melting/crystallization points and viscosity) with good thermal stability.
