• Four kinds of gas-producing Bacillus spp. were identified. • The contamination origin of gas-producing bacteria was traced by microbial profiling. • A multiplex qPCR was developed to rapidly screen gas-producing bacteria. • The method exhibited excellent specificity and sensitivity. • The applicability was determined using 84 commercial soy sauce products.
