• Metabolite constituents in green perilla seeds changed markedly with maturation. • Twelve phytochemicals in green perilla seeds were identified by UPLC-Orbitrap-MS. • Luteolin-7-O-glucoside and γ-tocopherol were most abundant in matured seeds. • Antioxidant activities of green perilla seeds increased during maturation. • Green perilla seeds in late Sep may be a good source for health food development.
