• Soft surimi gels as potential dysphagia food were obtained using xanthan gum. • Xanthan gum reduced texture properties of surimi gels, forming loose gel structures. • Hydrophobic interactions were critical in the composite gels. • Electrostatic repulsion contributed significantly to the myosin-xanthan gum interaction.
