• Bigel beads based on SA/CNF hydrogel and monoglyceride oleogel were developed. • CNF based bigel beads exhibited improved environmental adaptability under coupled pH-temperature stimuli. • Bigel beads enabled controlled release and improved bioaccessibility during in vitro digestion. • CNF-based bigels improved bioaccessibility of l-ascorbic acid, while SA favored β-Carotene.
