• GC × GC–MS identified 452 volatiles from four Capsicum cultivars. • Three distinct aroma chemotypes were delineated by threshold screening. • IBMP was absent in XML, suggesting a cultivar-dependent biosynthesis • FBMN revealed cultivar-specific capsaicinoid and flavonoid patterns. • A three-branch-point metabolic framework was proposed for flavor divergence.
