• Direct enzymatic hydrolysis by protease for selective solubilization of BSG protein. • Mild pretreatment recovered maltooligosaccharides and facilitated protein hydrolysis. • pH-stat hydrolysis at pH 8 and 60 °C enhanced process efficiency and yield to 93%. • neutral pH-stat hydrolysis yielded hydrolysate with protein purity up to 79%. • pH affects co-solubilization of phenolics and hydrolysate’s antioxidant potential.
