• As a stabilization method, combination of RF and UV can keep the microbial and enzymatic activities at low level during storage. • Even after stabilization treatment, the storage temperature still needs to be controlled to maintain the quality of buckwheat. • Extending storage time can enhance the impact of stabilization treatment on the metabolism of buckwheat. • Amino acid metabolic is the main regulated pathway for the stabilization treatment.
