• Asr caused pHin imbalance in VBNC formation of E. coli O157:H7 under acid/HPCD. • Reduced pHin triggered protein aggregation to decrease cellular ATP levels. • asr deletion inhibited protein aggregation and thereby accelerated bacterial death. • asr-mediated proteostasis disruption facilitated acid/HPCD-induced VBNC formation.
