• AI-based image texture analysis classified Chlorella-enriched biscuits with high accuracy. • Subspace Discriminant model achieved 97.86% correctness in biscuit classification. • Biscuits with Green Chlorella were classified most accurately by AI models. • Yellow Chlorella biscuits at 2.5% and 5% showed the highest classification overlap.
