• No growth occurred at 7 °C in MSM, and a slight growth in CWL and HCB. • Baranyi models accurately predicted S. aureus kinetics in chicken products. • Enterotoxins detected only at 37 °C when counts exceeded 6.5–8 Log CFU/g. • Industrial time–temperature simulations indicated minimal growth risk. • Growth kinetics varied by product matrix across all evaluated temperatures.
