• fNIRS compared PAC-related prefrontal hemodynamics in water, ethanol, and red wine. • Aftertaste showed broader and stronger prefrontal HbO responses than induction. • Beverage matrix was associated with sensory and prefrontal HbO responses. • OFC, FPA, and DLPFC contribute differently during aftertaste.
