• Sulforaphane (SFN)-loaded O/W emulsion was stabilized by complex coacervation. • Optimized SFN-ECC showed compact core-shell structure and high stability. • SFN-ECC had low SFN release in gastric, high in intestinal condition. • O/W emulsion-complex coacervation is useful for bioavailability enhance of SFN in foods.
