• Plasma was employed to assist acid-heat induced self-assemble fibrillation of zein. • Effects of fibrillation degree on the curcumin delivery characteristics were studied. • Emulsion properties enhanced with increasing fibrillation degree in specific range. • PZF4 (2022 ThT sample) had optimal curcumin stability, loading & controlled release.
